The agreed starting target is 24 portions. The opener counts 8 usable portions, leaving 16 to prepare. The manager then reviews what sold, what ran short and what remained before adjusting the next comparable day's target.

Those quantities illustrate the decision only. Shelf life, storage capacity, safe handling and demand determine what is appropriate for the actual operation.
